Waldorf Salad Recipe: A Waldorf Salad is a both sweet and tart apple salad recipe originating in the 1890's by the famous chef Oscar Tschirky at the Waldorf Hotel in New York.

Originally the Waldorf Salad was a vegetable dish with apples, celery and mayonnaise served on a bed of lettuce.

There are many variations of the dish.

This is a fresh and healthy version that is also low in fat and filled with vitamins, protein and fiber. So, you can enjoy this tasty appetizer as much as you like!

The Waldorf Salad looks crisp and elegant and is perfect for a dinner party or presented at a buffet.

You can prepare the recipe a couple of hours in advance and serve the Waldorf salad chilled on a bed of lettuce on individual plates as an appetizer, for example.

Or, if you serve Waldorf Salad at a buffet you might want to put a bowl of the salad in a larger bowl filled with ice, a clever way to make it stay chilled.

Here is what you do:

In a large bowl mix the fruit, vegetables and nuts:

  • 6 tart apples, chopped
  • 1 cup pineapple chunks, if you use canned, make sure they are drained very well first.
  • 1/2 cup raisins or halved seedless grapes- or both!
  • 1/2 cup walnuts, lightly toasted and roughly chopped
  • ½ cup celery, thinly sliced
  • 1/2 cup carrots, grated

Make the dressing in a medium bowl:

  • 1 cup plain yoghurt
  • 1/4 cup orange juice
  • 2 Tbs. Honey
  • Juice of 1 lemon

Whisk together then pour the dressing over the fruit and vegetables. Mix well. Chill for at least 30 min. before serving. Serves 8.
