Vegetarian/Vegan "Tuna" Salad

Un Tuna Melt

Un Tuna Melt

I stumbled on this in a moment of epiphany. I realized that artichoke tapenade had a similar consistency and oil content to tuna. Granted I haven't eaten tuna in almost 25 years, but let me know what you think.

pre-made or homemade artichoke tapenade
mayonaise, veganaise, or other brand
mustard (optional)
chopped dill pickles (optional)

For a small portion (multiply for larger portions): dollop 3-4 tbs of tapenade in a bowl.
Add 2-3 teaspoon dollops of mayonaise or veganaise.
Give a couple small squirts of mustard and add the pickles.
Stir it all together.

Spread it on bread and add lettuce, tomato, and sprouts. Alternatively, make an un-tuna melt by adding your favorite cheese or vegan cheese and grilling it in a medium-low skillet. Of course it can also be used as an horderve on crackers or pita triangles.

Love the idea!

Thank you so much for the recipe, I will definitely try this! It sounds really delicious! Great picture too!

I have only tried "un tuna salad" with mashed cooked chickpeas and chopped celery, but this sounds even better!
