A salad is a common addition to most meals. As well as oven baked, boiled, steamed or grilled vegetables; that doesn't really need a recipe. Potatoes, rice, grains or pasta suits most meals.
To complement a vegetarian meal, try to have some carbs or beans to "ground" the veggies, a small salad and some flavors that contrast the main dish.
Like for a creamy, cheesy dish that is more bland, perhaps add a halved grilled tomato for some acidity to spark it up.
Or add cooked broccoli with a dash of salt and pepper, olive oil and a little lemon juice. It doesn't have to be complicated.
