Shepherds Pie Recipe
Here is a vegetarian shepherds pie recipe packed with veggie protein. It's a lovely and family-friendly dish. A shepherds pie is easy to make and also to vary with whatever ingredients you have handy, using the veggies you prefer.
To make a vegetarian shepherd's pie, you basically make a stew with vegetables and perhaps some protein like:
- cooked lentils
- beans and rice (or bulgur)
- TVP ; texturized vegetable protein (soy) as in the recipe below
- or tofu
- and cook it in a tomato sauce. For veggies you can choose carrots, peas, corn, green beans or mushrooms. Or use any combination you like!
Put the stew
in a casserole dish and spread a thick layer of mashed potatoes on top. Bake in the oven until the potatoes are crisp and lightly
Serve as a satisfying (and popular!) family dinner together with boiled/steamed green
vegetables, a mushroom sauce and a fresh green vegetable salad.
Vegetarian Shepherds Pie Recipe
- 6 medium potatoes
peeled and halved.
- 1 cup TVP,
or textured dried soy protein flakes. (See alternatives above.)
- 1 onion,
- 2-3 medium carrots
peeled and diced.
- 2 Tbs.
- 2 Tbs. Soy
- 2 Tbs.
- 1 tsp vegan Worcestershire sauce (optional)
- 2 Tsp.
mixed herbs like thyme, rosemary, oregano or basil.
- 1 cup vegetable
stock, or 1 cube with 1 cup water.
- 2 Tbs.
white flour (optional)
- Salt and
pepper to taste.
- 1 tbs.
- ½ cup milk

- Set the
oven to 400F/200C.
- Place the
potatoes in a pot with enough water to cover them. Bring to a boil, lower the
heat and let boil slowly for about 20 min. or until potatoes are tender.
- Place the
soy protein in the water in a small sauce pan and bring to a boil. Take off the
heat and let stand to absorb the water.
prepare the other ingredients:
- Heat olive
oil on medium-low in a large saucepan and slowly sauté the onions for 5 min.
- Add the carrots
and sauté for 3 min more.
- Strain the
soy protein, and add to the onions and carrots. Increase heat to medium high
and cook for about 4 min. more while stirring often.
- Blend in
tomato paste, soy sauce and Worcestershire sauce (optional).
- Add the
stock and herbs, stir and cover. Let simmer for 20-30 min until flavors are
well developed. You may have to add some
water to keep it moist.
- While the sauce cooks,
drain the potatoes. Mash them and add butter, milk, salt and pepper and a
little nutmeg. Keep mashing until creamy.
- When the veggie
sauce is ready, sprinkle with 1-2 Tbs. white flour and blend well to thicken it. Season with salt and pepper to taste.
- Pour in a casserole dish, spoon the mashed potatoes on top like a lid. The
easiest way to do this is to us a table spoon and plop potato mash all over,
then to use a fork to spread it more evenly. You create nice patterns with the
fork too, which help making it crunchier.
- Place in
the middle of the oven in 400F/200C. Bake for 35-40 min. until potatoes are golden
brown and crisp.
