3 Vegetarian Quiche Recipes

Mouthwatering vegetarian quiche recipes are a great choice for a lunch, brunch or buffet table. Enjoy 3 of my favorite delicious vegetable quiche recipes that are easy to make and tastes great!

Vegetarian Quiche Recipes

I fell in love with the French "Quiche Lorraine" already as a child. A traditional French Quiche has only eggs, heavy cream and chopped or cubed smoked bacon or ham, but no cheese! However, as I believe any quiche tastes better with cheese it is added in the recipes.

A vegetarian quiche has only 3 parts; the pie crust, the egg mix, and the filling. The filling can actually be any cooked vegetables you like, or that are in season- so feel free to experiment. Great fillings are: broccoli, mushrooms, asparagus, leeks, shredded root vegetables like carrots, potatoes, parsnips, tomatoes, peppers, eggplants... actually anything!

It's also nice to add fresh herbs like parsley, dill, basil, rosemary, thyme, tarragon...

The cheese can be varied as well. Try feta, chevre, blue cheese (great with mushrooms!), gryere, emmenthal or my favorite: smoked cheese.

Since an elegant vegetarian quiche is a lot about the presentation, get a nice quiche pan for the perfect look:

3 Vegetarian Quiche Recipes

Pie Crust

For a very simple but tasty pie crust, use simple ingredients!

  • 125 gr Butter or margarine
  • 4 dl whole wheat flour
  • 2 Tbs water
  • 1/8 tsp salt
  1. Place butter/margarine, flour and salt in a bowl.
  2. With your hands or a fork, "crumble" it together until a grainy mix.
  3. Add water and knead together to a pliable dough.
  4. Let the dough rest in the fridge for at least 15 min.

Vegetarian Asparagus Quiche

Here's What You Need

  • 1 pie crust dough (above)
  • 1 oz/25 gr butter or margarine
  • 1 large yellow onion, finely chopped
  • 1 clove garlic, minced
  • 3 eggs
  • 5 fl oz/ 150 ml milk
  • 2 tbs double cream
  • salt and pepper to taste
  • 1 can green asparagus tips

Here's What You Do

  1. Pre-heat the oven to 400F / 200C.
  2. Roll out the pie crust dough to fit a pie form or flan tin. Press the dough into the form and prick the bottom with a fork.
  3. Bake for 5 min. until set but not browned. Remove from oven and let it cool slightly.
  4. Meanwhile, melt the butter and gently fry the onion and garlic on low heat for about 10 min. Don't let it brown.
  5. In a mixing bowl, whisk the eggs, add the milk and cream and season well with salt and pepper.
  6. Next, stir in the onion-garlic mix. 
  7. Pour half of the mix into the pie crust. Then arrange the asparagus on top. Pour over the rest of the mix on top.
  8. Bake for 35-40 min until filling is firm and slightly golden

Serve hot or cold.

Onion Quiche

Here's What You Need

  • 1 pie crust dough (above)
  • 4 large onions, finely chopped
  • 3 Tbs butter or oil
  • 1/2 tsp salt
  • 1/2 tsp brown sugar
  • 1/2 tsp dried tarragon
  • salt and pepper to taste
  • 2 eggs
  • 2 fl oz/50 ml single cream
  • 3 oz/75 gr grated cheese

Here's What You Do

  1. Pre-heat the oven to 400F / 200C.
  2. Roll out the pie crust dough to fit a pie form or flan tin. Press the dough into the form and prick the bottom with a fork.
  3. Bake for 5 min. until set but not browned. Remove from oven and let it cool slightly.
  4. Meanwhile, gently fry the onions in the butter/oil and a sprinkle of salt until translucent but not browned.
  5. Add sugar and tarragon and stir. Remove from the stove and let cool slightly. Season to taste with salt and black pepper.
  6. In a bowl, whisk the eggs, and mix in cream and cheese.
  7. Mix both onion and egg mix together. Add this into the pie crust.
  8. Bake for 30-35 min until the filling is firm.

This quiche is as tasty hot as it is cold. Enjoy!

Tomato Basil Quiche

Here's What You Need

  • 1 pie crust dough (above)
  • 6 ripe tomatoes, sliced
  • 1 bunch fresh basil, chopped
  • 6 oz/ 175 gr grated cheese (e.g mozzarella)
  • 3 eggs
  • 5 fl oz/ 150 ml single cream or milk
  • salt and pepper to taste

Here's What You Do

  1. Pre-heat the oven to 400F / 200C.
  2. Roll out the pie crust dough to fit a pie form or flan tin. Press the dough into the form and prick the bottom with a fork.
  3. Bake for 5 min. until set but not browned. Remove from oven and let it cool slightly.
  4. Meanwhile prepare the other ingredients. Thinly slice the tomatoes.
  5. Lightly chop the basil.
  6. Sprinkle half the cheese into the pie crust.
  7. Arrange the tomato slices and basil on top.
  8. In a bowl, whisk the eggs and mix in the cream/milk and the rest of the cheese. Season with salt and pepper and pour the egg mixture on top of the tomatoes.
  9. Bake for 35-40 min until filling is firm and lightly golden.

Serve either hot or cold.

Alternative Fillings

Here are some more delicious vegetarian quiche recipes fillings you can try:

Gently fried in a little butter or oil:

  • Parsnips and mushrooms
  • Chopped tomatoes and onions
  • Carrots and onions

Steamed or boiled and drained:

  • Broccoli or cauliflower and leeks

Or, just simply:

  • Sliced tomatoes, red onions and black olives.

Serve With
