Here is a Vegetarian Gravy that is also vegan. It is suitable for all sorts of vegetarian
and vegan dishes and is especially great for Thanksgiving, Christmas and other Holidays.
Try this rich, flavorful, brown gravy with nut roasts, mashed potatoes, vegetarian burgers, or whatever you like. I serve this gravy every year on my vegetarian Christmas buffet.
The addition of white wine
gives it an even more luxurious taste and the mushrooms gives a full "body".
This recipe freezes very well, so you could double the recipe and
freeze the leftovers.
Vegetarian Gravy Recipe
This Is What You Need
- 4 Tbs. Olive oil.
- 2 large onions, sliced
- 2 large carrots, thinly sliced.
- 4 oz. or 400gr. white mushrooms, sliced.
- 3 cloves garlic, minced.
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/2 cup dry white wine.
- 5 sun dried tomatoes, sliced.
- 1 tsp. dried marjoram.
- 1/2 tsp. dried thyme.
- 2 Tbs. all-purpose flour.
This Is What You Do
- Heat 2 Tbs. of the oil in a large sauce pan over medium heat.
Add onions, carrots, mushrooms, garlic and salt and pepper. Lower the
heat to medium low, cover and cook for about 25 minutes until the
vegetables are soft. Stir now and then. Increase the heat to medium,
uncover and cook about 8 minutes more until the veggies are lightly
- Now add the wine and simmer a few minutes
more. Add the tomatoes, the spices and 2 ½ cup water (or stock). Cover
and simmer on medium low for about 30 minutes more.
- Strain the broth in a fine-holed sieve, and press the veggies with a spoon to squeeze out all the juice.
2 Tbs. oil in a saucepan on medium heat. Add the flour, stir and cook
until the flour becomes lightly brown, about 5 min. Finally whisk in the
vegetable sauce and stir and cook for about 5 minutes until the sauce
becomes thicker. Remove from the heat.
