In Greece, where I live, vegetarian appetizer recipes are as common as the main dish. Greeks are masters of "Mezedakia ", or "little appetizers", and in fact, we often eat only those delicious little dishes.
An appetizer can be as simple as a quartered tomato, some cucumber bits (peeled!), a few black olives, and some feta cheese on a plate. It can be more sophisticated too- but Greek food is famous for it's simplicity.
The "secret ingredients" are market fresh, sun warmed vegetables, quality olives and feta, salt and pepper, and lots of super good virgin olive oil!
When we go out and eat, we more often than not order only "Mezedakia" or smaller plates of appetizers and salads. But a lot of them! Then everyone picks and chooses whatever they like from the plates.
However, although I love the Greek vegetarian appetizers, there are fantastic vegan and vegetarian appetizers from all around the world.
