Let’s build a salad! My son coined this expression in our family when he was trying out a raw food diet, creating salads all the time…!

I love the thought of “building” a vegetable salad; start with the base, adding different textures like crunchy or soft, different tastes like salty or sweet, adding many different colors and finishing off with something little extra as decoration.
A well “built” vegetable salad is beautiful, colorful, healthy and delicious.
Vegetables used in a salad can be raw or cooked - or both.
The dishes can be used as appetizers, side dishes, main meals as well as desserts. They can be decadent or frugal, overindulgent or super-healthy, as simple or as complicated as you wish.
To me a meal without a vegetable salad is not complete.
Being a
vegetarian and the main chef of the house, my husband (who is not
vegetarian) happily acclaims that we’re “eating vegetables with
vegetables”! And sure, we are! Here is a collection of fantastic creations for your own cooking.
