Here is a vegan cake recipe I make every Christmas, and I am so proud and feel so clever each time!

I am not really a “dessert” person. I like it when recipes are easy, and when it doesn’t really matter if you change the quantities a bit, or even improvise with the ingredients if I don’t have everything at home.

Normally dessert, cake and cookies recipes thwart me off, since they are to me a bit too fuzzy.

But this vegan cake always looks and tastes fantastic, and is so easy to make.

The cake last for days (tastes better each day!), is a great gift and fills the house with pleasant, spicy, Christmas-y aromas. If you don't have walnuts, you can also use pecan nuts.

Tip:

Did you know that walnuts lasts "forever" in their own shells, but only for a short while without shells? Try to find walnuts with their shells on, store them in the fridge and only crack the nuts you need! : )

Vegan Cake Recipe with Walnuts, Raisins and Spices

Here's What You Need

  • 3 cups all-purpose white flour, (don't pack it!)
  • ¾ tsp. baking soda
  • 1 ½ tsp. baking powder
  • 1 ½ cups brown sugar
  • 1 ½ cups raisins
  • 1 tsp. ground nutmeg
  • 1 ½ tsp. ground cinnamon
  • ½ tsp. ground cloves
  • 1/2 tsp. ground ginger
  • ½ tsp. salt
  • 3/4 cup margarine
  • ½ cup chopped walnuts

Here's What You Do

  1. Preheat oven to F350 or C180.
  2. Mix together the flour, baking soda and powder in a bowl.
  3. Take some margarine on a piece of kitchen paper and lightly grease a Bundt pan all over.
  4. Put sugar, raisins spices and salt in a saucepan with 1 ½ cups of water. Stir and bring to a boil. Cook and stir occasionally until the raisins plump up. Take the pan off the heat and add the margarine.
  5. Stir until margarine has melted, then add the flour mixture and the walnuts. Mix all together, and then pour into the Bundt cake pan.
  6. In the oven it goes on the middle rack for about 40-45 minutes. Test with a kebab stick if it is ready. If the stick comes out dry, the cake is ready!
  7. Let the cake cool in its pan, put a beautiful plate on top, invert and voilà; Amazing Holiday Cake!

You can sprinkle confectioners’ sugar on top for a snowy effect. Or even cut out small stars or Christmas trees in paper, place on the cake, sprinkle the sugar over and take away the paper for an even more festive patterned look!

This vegan cake recipe is so easy, that you can make two and give one away as a Christmas food gift!
