Tomato Mozzarella Salad

"Insalata Caprese" is Italian and means that this tomato mozzarella salad is «in the style of Capri», the Island outside the west coast of Italy, close to Naples. 

This is a very popular Italian salad recipe that is perfect as an appetizer. It is simple and very flavorful with the right ingredients.

Fresh mozzarella «buffalo» cheese, sun ripened tomatoes, fresh basil leaves drizzled with quality virgin olive oil, salt and pepper and perhaps a little red wine vinegar.

The colors; White (cheese), red (tomatoes) and green (basil leaves) are also the colors of the Italian flag!

When buying tomatoes, make sure to leave them in the sun in room temperature for a couple of days. This will help ripen the tomatoes and make them much more sweet and flavorful.

Basil is relatively easy to grow in a small pot indoors. I have never managed to keep it alive for more than one season, but it is so easy to plant a new one and delicious to always have at hand for many vegetarian recipes like this one. However, when I don't have fresh- I simply use dried basil!

There are plenty of opportunities to get creative with this little salad dish; Try putting cherry tomatoes and mini mozzarella balls on skewers and sprinkle with some basil pesto, or build individual stacks of tomato slice-cheese slice-basil leaf, and top with an olive on a tooth pick.

Or, you could slice a tomato almost all the way down, but making sure the tomato keeps together in the bottom, then carefully insert thin mozzarella slices and basil leaves in between the cuts. Drizzle with olive oil, vinegar, salt and pepper. Or use balsamic vinegar, or basil pesto, and maybe some toasted pine nuts...

You could really go wild with this lovely tomato salad!

How to Make Tomato Mozzarella Salad

Here's What You Need

  • 2 ripe large tomatoes, sliced
  • 1 large lump of fresh mozzarella «di bufala», sliced
  • Fresh Basil leaves
  • Extra virgin olive oil
  • Red wine vinegar
  • Salt and freshly ground black pepper

Here's What You Do

On a large plate alternate tomato slices, cheese slices and basil leaves. Sprinkle with olive oil, a little vinegar and some salt and pepper.

Enjoy with a glass of white or red wine and some fresh, crusty bread for a gourmet appetizer a’la Caprese!
