What You Need:

Here are the basic ingredients that are good to have at hand for making your own gourmet dressing:

  • Extra virgin olive oil
  • Vinegars: Red wine, white wine and balsamic
  • Lemons
  • Salt and pepper
  • Dijon mustard
  • Mayonnaise
  • Buttermilk, sour cream or yoghurt
  • Herbs, fresh or dried
  • Garlic and onion, fresh or dried
  • Spices: Curry, cayenne
  • Soy sauce, vegetarian Worcester sauce
  • Ketchup
  • Honey or sugar
  • Pickles

Stock up on the best quality you can afford. Olive oil, vinegars, mustard, lemon, honey, spices and dried herbs last for a long time so it is worth getting great quality.

Homemade dressing lasts for up to a week in the fridge, so only make as much as you need for 5 days at a time.

How to Make a Salad Dressing:

  • A salad dressing generally needs as a base 2/3 oil and 1/3 lemon or vinegar. Then spices and herbs are added for a vinaigrette.
  • Honey, maple syrup or sugar may be added to “round off” the acidity of the vinegar or lemons.
  • Mustard can be added for making the vinaigrette thicker, and mayonnaise, buttermilk, sour cream or yogurt for making creamy dressing recipes and dips.
