Creamy Broccoli Soup
Here is a creamy broccoli soup recipe that is also very kid friendly and among our family’s favorites. It doesn't hurt that it's also super quick and easy to make.
We all know how good broccoli is for us, right? It is low in calories, but high in fiber, minerals and vitamins. Broccoli is also a strong antioxidant and helps lowering the risk for cancer.
My youngest son had decided that he absolutely hated broccoli. So I told him
this soup is like spinach soup (not mentioning the word broccoli) and for some reason it
turned into his favorite soup of all; under the name of “Spinach Soup”.
course, he never really liked real spinach soup …Eventually he learned the secret, but he still likes this green soup very much.
Use either fresh or frozen broccoli, it is as tasty. You could serve this delicious broccoli soup together with
grilled sandwiches and a mixed vegetable salad for a healthy vegetarian main meal. The
leftovers of the soup will also freeze nicely.
*This recipe is lacto vegetarian. If you prefer it vegan, it is easy to substitute the milk for a
vegan alternative for a tasty vegan soup.

Quick and Easy Creamy Broccoli Soup
Here’s What You’ll Need
- 1 Tbs olive oil
- ½ onion, chopped
- 2 cups vegetable broth
- 1 cup broccoli, frozen or fresh, cut in smaller pieces
- 1 Tbs. parsley, chopped
- 1 cup milk, or vegan milk substitute.
- Salt and pepper to taste.
Here’s What You’ll Do
- Heat the oil in a pan on medium heat. Saute the chopped onion in the olive oil for about 3 min. or until soft and translucent. Do not let it brown.
In a medium saucepan bring the vegetable broth to boiling. Reduce the
heat, add the broccoli and let it simmer for 5 min.
- When the broccoli is tender, put it with a slotted spoon in a
food processor or blender, (if it doesn't fit, you don't have to put all the broth in the blender)
together with the sauteed onions and chopped parsley.
- Blend until smooth. Pour the blended
vegetable mix back into the broth in the pot.
- Reheat the creamy broccoli soup slightly and season with salt and pepper to taste. Add the milk and stir just before serving.
You can garnish the soup with croutons, a few (saved) cooked broccoli florets, some sprinkled cheese or a small dollop of Yogurt if you like.
