Here is a lovely, happy carrot soup recipe that is flavorful, light and easy to make!

The simplicity of the dish combined with its happy color and freshness, makes it perfect as a "mood improver" too!

Carrots are a powerhouse of nutrition. Raw carrots are delicious just as they are and packed with vitamins and nutrition. Try to eat at least one a day!

For creamy soup recipes like this it's best to use a blender. I recommend a Vitamix, since they last forever and is one of my favorite kitchen tools. Really great quality.

Carrots have especially high values of beta-carotene which turns into vitamin A in our body (great for improving vision) and antioxidants (works to prevent cancer for example), but cooked carrots actually release even more antioxidants!

Orange and Carrot Soup Recipe

Here’s What You’ll Need

  • 2 pounds carrots, peeled and chopped.
  • 1 large onion, finely chopped
  • 2 Tbs olive oil
  • 4 cups vegetable stock
  • 1/2 tsp ground nutmeg
  • 1/2 tsp paprika
  • 2 tbs chopped parsley or coriander
  • thin outer peel (whole) and juice of one orange
  • Salt and pepper to taste

Here’s What You’ll Do

  1. Start by heating the oil in a large pot over medium heat.
  2. Gently saute the onion until translucent, 3 min. Do not let it brown.
  3. Lower the heat to medium-low. Add the carrots, cover and cook for about 10 min.
  4. Add the rest of the ingredients. Increase heat and bring to a boil, then lower the heat, cover and simmer for about 40 min. until carrots are soft. Stir now and then.
  5. Let the soup cool a little, remove the orange peel then add to a blender and liquidize until smooth.
  6. Return to the pot to heat through.
  7. Serve this carrot soup warm. A grilled sandwich goes great along for a tasty meal.
