Baked Pasta Recipe

A quick, healthy and easy meal is a vegetarian baked pasta recipe. It is a light and fresh lunch or dinner dish that can be done in 30 min.

You can vary the veggies with anything, really. Use any type of pasta you like, and make it vegan by adding a vegan alternative for the cream.

This type of pasta bake, or casserole, is sometimes called pasta Primavera. Pasta Primavera is a simple dish with pasta and fresh vegetables in a cream sauce, sprinkled with parmesan.

A vegetable pasta bake is a light and summery dish, that in my opinion tastes as good hot or cold. It's also perfect for a buffet table. This recipe is both frugal, family friendly, easy to make and healthy!

Compared to a lot of pasta bake recipes, this recipe uses very little cream and cheese. The simple and great taste comes from the ingredients, and not from being "smothered" in cream and cheese.

You can replace the cream with any vegan alternative, and the parmesan too, but use a strongly flavored cheese so you won't need so much!

Vegetarian baked pasta recipe

Vegetarian Baked Pasta Recipe

Serves 4-6

Here's What You Need

  • 12 oz. Pasta, any shorter type like spirals or ziti.
  • 1 lb. white button mushrooms, cleaned, halved and sliced.
  • 1 red pepper, diced.
  • 1 green pepper, diced.
  • 2 Tbs olive oil.
  • Juice of 1 lemon.
  • 6.8 oz single or double cream, (or a vegan alternative).
  • salt and black pepper to taste.
  • 2 oz Parmesan cheese (or vegan alternative), grated.

Here's What You Do

  1. Cook the pasta in boiling water with a little salt and a dash of olive oil, for about 10-15 minutes until the pasta is tender but not overcooked.
  2. Heat the oil in a large pan and stir-fry the peppers and mushrooms for about 7-10 min. Do not let them brown.
  3. Drain the pasta and add it to the vegetables and stir.
  4. Add the cream, lemon juice and season with salt and black pepper to taste.
  5. Stir and pour the mixture into a casserole dish.
  6. Sprinkle the grated parmesan (or alternative) generously over the dish.
  7. Grill in the oven until the cheese has turned a lightly golden brown.
  8. Serve the baked pasta hot, warm or cold.

Serve With

Serve this vegetarian baked pasta by itself for a quick and light lunch. Or serve with lightly cooked or steamed green vegetables like broccoli or green beans together with a grilled tomato as a more substantial dinner dish.
