This is an avocado salad recipe that is loaded with nutrition. Simple, healthy, and very tasty.

The Salad is satisfying enough for a main meal and pretty enough for a party buffet. And check out what the nutritious vegetables contain:

Avocados, although high in fat, contain lots of the “good” kind of fat; mono-saturated and have proven to lower blood cholesterol quite dramatically.

Among several other health benefits they also contain a lot of vitamin E, which is good for your overall health.

Artichoke is packed with nutrition, but also helps prevent cancer, lowers cholesterol, is good for the liver, and high in fiber among many other things.

Red beets are very high in vitamins, minerals and antioxidants, and have proven to lower blood pressure.

Bean sprouts are little bombs of nutrition; they contain high amounts of vitamins, minerals and enzymes. Talk about super-salad! Here is the recipe:

Avocado Salad Recipe

Here’s what you’ll need

  • 4 red beets, boiled and sliced
  • 1 head Bibb lettuce, torn in large bits
  • 1 jar artichoke hearts, drained and quartered
  • 1 ripe avocado, sliced
  • 1 cup fresh bean sprouts, for example alfalfa


  • 1/3 cup red wine vinegar
  • ½ cup olive oil
  • 1 tsp dried basil
  • 1 cove garlic, minced
  • ¼ tsp. black pepper

Here’s what you’ll do

  1. Start by preparing the dressing so the flavor has the time to blend and develop.
  2. On a large serving plate; put first the leaves of the lettuce, then arrange with the sliced avocado, artichoke hearts and beets and finish with the bean sprouts.
  3. Pour the dressing on top and serve.

If you will not serve the salad immediately it is a good idea to wait with the dressing, but sprinkle the avocado with some lemon juice so they won’t get brown.
