VEGAN
This is an avocado salad recipe that is simple, healthy, and very tasty. Satisfying enough for a main meal, pretty enough for a party buffet. And listen to what the nutritious vegetables contain:

Avocados, although high in fat, contain lots of the “good” kind of fat; mono-saturated and have proven to lower blood cholesterol quite dramatically.
Among several other health benefits they also contain a lot of vitamin E, which is good for your overall health.
Artichoke is packed with nutrition, but also helps prevent cancer, lowers cholesterol, is good for the liver, and high in fiber among many other things.
Red beets are very high in vitamins, minerals and antioxidants, and have proven to lower blood pressure.

Bean sprouts are little bombs of nutrition; they contain high amounts of vitamins, minerals and enzymes. Talk about super-salad! Here is the recipe:
Dressing:
Start by preparing the dressing so the flavor has the time to blend.
On a large plate put first the leaves of the lettuce, arrange with the sliced avocado, artichoke hearts and beets and finish with the bean sprouts. Pour the dressing on top.
If you will not serve the salad immediately it is a good idea to wait with the dressing, but sprinkle the avocado with some lemon juice so they won’t get brown.
